Recipe: Black Beans & Brown Rice

2 Cans black beans (15-oz each) drained & rinsed
1 avocado, chopped
1 cup salsa
2 tbsp fresh parsley or cilantro, chopped
1 medium tomato, chopped
1 lime, juiced
salt
pepper

Cooked brown rice

Pour black beans, avocado, tomato, salsa, parsley/cilantro, and lime juice into bowl. Mix together, gently. Add salt and pepper to taste. Serve over cooked brown rice.
